Kauai Food Diary

Is this not the sexiest thing you’ve ever seen?

As the obsessive foodie I am, I always get curious about what people eat on a daily basis especially if they’re vacationing, traveling, etc. etc. Sooo I thought it’d be fun to share examples of what a normal day of eating looked like for me while I was in Kauai for a month, especially since I would constantly have the freshest produce at my fingertips. They don’t call it the Garden Island for no reason ya know…

Whenever I’m in hot weather/wearing bikinis all day/doing lots of physical activity constantly, my body naturally gravitates toward fresh fruits/veggies and smaller portions in general,  rather than super hearty large meals throughout the day. That’s just what works best for me, personally. I don’t get bloated/feel heavy throughout the day when I work with smaller portions. And most importantly, I don’t get hangry, which is usually one of my biggest downfalls. Just ask any of my family members 🙂 🙂

Biggest tips for eating well on vacation:

– Limited to no alcohol. (Seriously makes the biggest difference.)

– Portion control.

– Whole, unprocessed foods.

Breakfast is usually really light, sometimes I’d skip it because my 2 cups of coffee (with coconut oil/cashew milk) would fill me up with all those good fats. Since I’d workout around 9ish everyday I didn’t want a full belly of food before I jumped around and what not. Anyways, I always had at least two cups of coffee with a tablespoon of coconut oil + some cashew milk + cinnamon + Naikela botanical’s adaptogen powder. That combo gives me the best energy and actually keeps me pretty satisfied until around 11 or so. If I wasn’t working out though then normally it would be some fruit, specifically half a papaya or an apple banana with a spoonful of almond butter. Nature’s candy I swear. OR we’d grab acai bowls up the street. And I’d also sip on a tiny cup of kombucha for the probiotics and to get things moving if ya know what I mean…

Lunch would be right before we would head to the beach so I would just dip some turkey slices in hummus with some slices of avocado and then I’m good to go. Those are basically my three favorite foods by the way, so it’s super satisfying for me. If not that, or if I’m more thirsty/need something cold, then I’d go ahead and make a quick smoothie. Super easy and sooo so good.

Dinner was always salad (with cucumber, goat cheese, tomato, radish, onion, carrots, etc.) + some form of meat+ sometimes a side of either potatoes or another side veggie. My cousins would bake dessert every night of some sort, so I would have a bite or two of whatever they made. I’ve learned that depriving yourself only makes things worse so a little sugar is A-ok.

When we got back from the beach every day I’d have a snack around 3-4ish to hold me over before dinner and chill. It usually always consisted of something with hummus. I love hummus…Then around 5:30 we’d make drinks and watch the sunset, then eat dinner!

Hey guys…

Secret Beaches + Old Friends

Processed with VSCO with f2 preset

Excuse the radio silence yesterday. One of my oldest best friends and her boyfriend landed on the island Sunday night so I was spending most of the day with them yesterday! I met them at Poipu beach, then around 3 or so I took them to a hidden beach even I hadn’t been to yet. It was uuuunreal. Plus, the last time she was in Kauai was with me like 6 years ago which made it even more special!

I’m not sure why it took me so long to explore this hidden beach that I’ve known about since…forever? It wasn’t that difficult to get to and it was even better than I expected. Just goes to show that getting out of your comfort zone and exploring (even if you do it by yourself) is always worth it!

P.S. I’ll be doing a post on sun skincare soon (sunscreen, dark spots, after-beach routine, etc.) seeing that I’ve been in the sun a lot for the past month and kinda feel like I have a good little routine going for me. This is for anyone else who is or will be in the sun soon! ❤

So at last it’s just me in this big ol’ house here in Kauai. The holiday’s are over and everyone has left to head back to the real world. The last of my family leaves today, except my grandparents, they’re staying until the 16th (me, the 13th). One of my best friends comes in on the 8th and I’m so excited!! Today I’m getting my nails done, grocery shopping for this curry I’m gonna make tonight, walk, and then watch the sunset at Shipwrecks beach. ❤

Mostly what this trip has consisted of:

– Cortado Coffee trips

– Gym

– Beach x 1000

– Family dinners

– Kauai Juice Co…every day.

-Watching daily sunsets + sunrises like it’s our job

These past 2 weeks were amazing and also pretty exhausting, but in a good way. I love family time over here but I’m one of those people that gets so burnt out when I’m constantly having to make small talk every night at the dinner table and having to play catch up with all of the cousins/uncles/aunts. It’ll be nice to have some days and nights alone to have time to cook for myself, watch my shows, start to truly plan my Australia trip, and read a book on the beach with no interruptions like the good ol’ introvert I am likes to do heheh. Processed with VSCO with c1 presetProcessed with VSCO with c1 presetimg_8012Processed with VSCO with c1 presetimg_8112Processed with VSCO with c1 presetProcessed with VSCO with c1 presetSAMSUNG CSCSAMSUNG CSCimg_8179SAMSUNG CSCSAMSUNG CSCProcessed with VSCO with c1 presetimg_8096

It’s 2017!!!

Very optimistic and extremely excited for what’s to come this year for me. Travel, relationship, and career-wise it should be prettyyyy damn good. I don’t like the idea of me turning 23 (w.t.fff) or the fact that shit starts to get real in my little adult life but I can’t WAIT. I just want to be constantly busy and feel fulfilled in everything I do! This will be the year of saying “yes” to more things.

I celebrated my grandma’s birthday for new year’s eve last night and then basically went to bed hahaha. Almost went to a party but the fact that Kauai has no ubers and I only knew like 2 people that would be there I thought naahhhh. Sleep + not being hungover is more fun as of lately. Anyone else??

Have a great day, guys and happy January 1st, 2017!!

Long overdue Sunday Roundup:

Christmas Eve dinner with the squaaaddd.

I think my family might win the award for most untraditional + zero f’s given of them all…and I love it.

Thanksgiving was in Kauai, not even with my whole family…where we gladly just ate fish and veggies and went to bed early.

Christmas was in Kauai with the whole fam. No Christmas tree or anything, just gifts on the porch. The rest of the day was spent soakin’ up the sun on the beach with everyone.

New Years will be rung in with my sister and her hubby here in Kauai with some new friends. Probably going to a bar for some drinks and the countdown.

Super super chill and I wouldn’t want it any other way. The holidays will always be the holidays despite the lack of super traditional events for us because as long as the whole gang is together, that’s honestly all that matters! I hope everyone had an amazing Christmas, traditions or not, because as long as you find what you’re grateful for each year then that’s all it really comes down to. ❤

And from yesterday, an early birthday present to my grandma: a 3.5 hour ATV ride through mud and rain because isn’t that how most grandmas celebrate their birthdays?

If you ever want an epic ATV ride with amazing views (think locations from: Jurassic Park, The Descendants, Pirates of the Caribbean, etc.) then check out Kipu Ranch Tours. Super cool tour guides and epic scenery.

Happy Monday! Hope everyone is either on break or almost at their break for the holidays. I’m currently sipping my coffee looking out at the rainy weather outside our place in Kauai. It’s funny, I used to get depressed whenever it used to rain during Christmas time when we’ve been here in the past, but now I fully embrace it and actually love it! It’s so nice to see the island become so green, and you can smell the dirt (sounds gross but you know what I mean) and plants, etc. From San Diego where it never really rains, it’s always a nice change. Plus I can give my skin a break from the sun and write some posts for you guys! These past few days involved getting lots of Kauai Juice, going on a sunset cruise, seeing old friends, shopping, and celebrating my dad’s birthday! So far so good this trip. Can’t wait until the entire fam is all here ❤

Today my brother gets here all the way from NY!!! Can’t wait to see him. I’m probably going to shop for his Christmas gift at some point (p.s. why are brothers always so hard to shop for??), then head into Hanapepe to shop at Blu-Umi and find some goodies. Today is leg day which I feel like I should point out because I always dreaddd BBG leg days and it’s half of what I think about all day until I do it and it’s over haha. I die. But in a good way!

A few (a lot..) snapshots from the past few days:

Mom and dad bein kewtttt

Internet Things:

My dad’s attempt at shaving the back of his neck yesterday. Lolingggg.

Hi hi hi!! So I’m going on day 3 without wi-fi which is why I’ve been a little radio silent, BUT hopefully that’ll be fixed at some point today. We are officially in Kauai for Christmas and so far the weather has been on point which is exciting since it’s been rainy recently!! (knock on wood though…) My parent’s and I are about to walk to Kauai Juice Co. to try out some of their new nitro coffee and grab a free elixir shot, then probably head to the gym and then BEACH. I’ve become so anal about sunscreen and keeping my face far away from the sun recently and I think, although subtle, I’m noticing differences! On Saturday you’ll see my current obsession when it comes to getting rid of dark spots (thanks to my mom who introduced me to the stuff!).

Hope everyone has a good day! ❤

Cool: Ummm just a casual giant feather from a dinosaur was found recently in Myanmar. I love this kind of stuff haha.

New study: for those meat lovers who say veggies just don’t fill you up, that might all just be in your head!

Tech + Health: really cool new gadget that tracks the amount of minerals/vitamins you intake. Very futuristic, I’m kinda digging it!

Mental Health: 8 ways to tell if you’re mentally strong.

Making this: nut butter and sea salt brownies. Hubba hubbaa.

Inspo: this place is so cute. I love general stores.

Good to Know: what to do with all of those hard to recycle items such as old computers to jars with leftover food residue.

Family time: 30 movies you can watch with the whole fam ❤

Best Coffee Shops in Kauai (Southside)

Hi my name is Amanda, and I’m a coffee addict. Like, my teeth should be black and my adrenals should be dead at the rate I’m going with the amount that I drink hahaha.

For real though, this is an exciting post because I am an enthusiast for all things involving coffee. From the style of coffee it is to what type of milk/superfood powder/spices are added to create the perfect drink, I love it all and find it to be the one major staple of my morning routine that I (literally) cannot do without. And when I’m on a tiny island where they have their own coffee plantation with some of the best beans I’ve ever tasted, how could I not provide a little guide of my favorite spots I go to when I’m not brewing at home.

1. Lappert’s

Location: Koloa

Hours: Daily 6am-10pm

To get right to the point, these people are pros. I’m actually drinking out of one of their mugs as I type this haha. They’ve been around for so long I believe they’ve really perfected both their coffee and ice cream because they are top-notch. I feel like if you come to Hawaii in general and don’t try Lappert’s, then you’ve missed out big time. I love their soy lattes and the fact that they have stevia as a sweetener option ❤ Most places don’t carry it so I’m always left to use the nasty raw sugar that doesn’t taste good/never fully dissolves. Anyone else agree?!

If you’re going to get ice cream though, then get a double scoop, in a waffle cone, of Kauai pie and kona coffee. Thank me later.

2. Dark Roost Coffee

Location: Lawai (3540 Koloa Rd.)

Hours: M-F 7-12

This instagram-worthy little trailer of a coffee shop in Lawai is so good. They’ve got pour overs, aeropress, lattes, tea, and daily food/drink specials. Best part is that they’re located next to Warehouse 3540 which has a bunch of little pop up shops and stores that you can browse with your coffee in hand.

3. Little Fish Coffee

Location: Hanapepe (3900 Hanapepe Road)

Hours: M-T 6:30-5, F  6:30-9, Sat. 8-5, Sun. 8-3

Okay this place is the cutest and has a big selection of coffee options, plus acai bowls/juices/bagels etc. which is always a plus. I highly recommend their honey nutmeg latte. Super super good. After you grab your coffee, head over to the swinging bridge across the street and maybe you’ll even spot the local kitty that hangs around there.

4. Living Foods Market

Location: Koloa

Hours: M-F 7-9

This place is inside the little market/grocery store in the Kukuiula Shopping Center but they have a really wide range of coffee options including milk substitutes of coconut, almond, and soy milk.

Side Note: For all you GF peeps, they have GF breakfast crepes which I’ve seen, and need to try.

5. Java Kai

Location: Kapaa

Hours: Daily 6-7

So this isn’t on the Southside per se BUT it’s a must if you’re on Kauai. Probably the most variety on the island when it comes to drinks. Think: chemex pour-overs, macadamia nut lattes, thai coffee…and the list goes on. It’s always busy in there so you know it’s good. You can stop by Kauai Juice Co. right behind it to grab a booch or green juice before heading to the beach! Also check out Shipwrecked, the clothing store located basically in conjunction with the cafe. Really really cute stuff.

Lately/Design Inspo

Lately: It’s been a rainy (making this island even more magical) past few days in Kauai but I’m loving it. Although I had a little bit of FOMO the first two days I arrived, I realized how lucky I am and how zen and healthy I feel when I’m here. On Sunday I helped unload the crate full of furniture/art/dish ware into my Grandparents’ new house which was exhausting but I’m so pumped I get to be one of the first people to see it really come to life! A few snapshots from the past few days:

Design Inspo: Since my goal is to open up my own boutique hotel one day that revolves around wellness and sustainability, when I came across this boutique hotel in Bali I fell in looovee.

Their vibe: psychedelic surf rock, modern, tropical luxury, sustainability, with a side of take it easy, man. What more could you want, ugh.

The Slow,  Canggu, Bali

“Located at the crossroads of surf breaks, rice paddies, the mystical hills of Ubud, and cosmopolitan Seminyak, guests can choose to peace out or go play.

Check out their instagram to get a better sense of their vibe. I’m seriously in love with it.

Hanapepe Art Night

Every Friday is a little art night in Hanapepe, on the South side of Kauai, featuring local artists and food. It’s fun because although being pretty popular, tons of locals like to head over and check it out, too. My grandparents and I went to Japanese Grandma’s Cafe  for dinner, a cute and new little sushi restaurant inside a shop right on the main drag. Outside, a local band was playing under twinkly lights with people dancing in the street ❤  My kinda night.

If you’re ever in Kauai, I would check this out if you get the chance.

One of the shops along the street is a woodworker who actually built a dinner table for my grandparents for their new house. They wanted to see if he had finished it since it was supposed to be ready within the next few days or so, so we popped in, and it was right there when you walked in! This was their first time seeing it finished!! They were so  excited, can you tell? hahaSAMSUNG CSCProcessed with VSCO with c1 preset

I had the veggie roll with some ahi nigiri and edamame. Soooo yumz.
